Three generations of the Sailsi family have cultivated the dry, rocky plains south of Sfax — the heart of Tunisia's olive oil capital. Mohamed Sailsi took over in 2008 and earned the family's first organic certification in 2014. Every harvest is cold-pressed within 24 hours at the family mill.
